In order to enter the field of impedance spectroscopy, we developed several electrical circuits and we tested and discarded a number of measurement schemes including the use of a digital oscilloscope and different software tools. Finally, we found a suitable analogue method that we used to characterize a number of objects. We focused on foods and we found a way of determining their quality from their impedance spectrum.
